Grilled Mediterranean Potato Salad

Ingredients

    2 red bell peppers
    2 lbs. Medium red skinned potatoes, sliced thick
    c. + 2 T. olive oil
    1 t. coarse salt
    c. red wine vinegar
    t. freshly ground black pepper
    c. drained capers
    1 c. black olives, pitted
    c. fresh flat leaf parsley leaves

Directions

Heat grill or oven to 450. Roast peppers on grill until charred on all sides. Place in bowl and cover with plastic wrap until cool enough to handle. Remove skin by rubbing with a paper towel. Remove seeds and stem, cut pepper into thick strips and set aside. In a bowl combine potatoes, 2 T. olive oil and t. salt. Grill potatoes until browned on both sides and tender, or roast on baking sheet in oven until nicely browned, about 40 min, turning halfway through cooking time. Make the dressing: Add vinegar, t. salt and pepper, whisk to combine. Slowly whisk in c. olive oil. Combine potatoes, red peppers, capers, olives, parsley and dressing in a bowl and toss to combine. Serve warm or at room temp.
