Ingredients
-
4 oz Mahi Mahi (or any whitefish)
1 tsp minced garlic
1 tsp ginger
dash pepper
1 med tomato
juice of half a lemon
Directions
-preheat oven to 350 degrees
-place fish on a sheet of aluminum foil
-cover with garlic, ginger and pepper
-place tomatoes on top of seasoned fish
-top with squeezed lemon juice
-close up foil into a "pouch" so that the top and end are sealed
-bake for 10-20 minutes depending on thickness until fish flakes
