Whole Wheat Spaghetti, 1lb, cooked
Olive Oil, Extra Virgin, 1/3 cup
Cremini Mushrooms, fresh, 4 cup (8oz) finely sliced
Garlic, 1 clove minced
1 Lemon, zest and juice
Thyme, fresh, 1 tsp
Parsley, 1/2 cup
Parmesan Cheese, grated, 3 tbsp
Kosher or Sea Salt, 1 tbsp
Pepper, black, to taste
Cook the pasta according to the packet instructions and drain loosely retaining some water (about 1/2 cup). Quickly put the pasta into the bowl with the mushroom mixture.
Toss everything together well, add pasta water to make a sauce; then add the parsley, cheese and pepper before tossing again.
