Dijon Garlic Meatloaf (with Flaxmeal) - BUFFALO

Introduction

Flaxmeal takes the place of bread crumbs for a lower carb version of this family favorite, and ground buffalo gives a robust flavor and a leaner meal.

Number of Servings: 8

Ingredients

    2 lbs ground bison/buffalo

    1/4 cup of flaxseed meal

    1/2 teaspoon of salt

    1/4 teaspoon of pepper

    2 eggs

    1/4 cup of chopped onion (You can use a mini prep processor to get the pieces very small or make them chunky like I did here).

    1 TBSP minced garlic

    1/4 cup of dijon mustard

Directions

Preheat oven to 375 degrees farenheit. In the bottom of a large mixing bowl combine all dry ingredients. Add the eggs and beat with a wisk. Add the onions and garlic, mix, then add the meat and dijon mustard. Mix all ingredients together and transfer to a casserole dish. Shape the meat dough into a nice oval patty. Place in heated oven and bake for 60 minutes. Meatloaf should be browned on top and cooked all the way through when done. Let stand 10 minutes before cutting and serving.



Serving Size: divide loaf into 8 equal servings
