Frittata - HS

Submitted by: TAMRACLOVEC

Introduction

Frittata from Heidi Swanson's Super Natural Every Day. Frittata from Heidi Swanson's Super Natural Every Day.
Number of Servings: 8

Ingredients

    EVOO spray
    2 small onions, chopped
8 oz new potatoes, sliced paper thin
    2 shallots, chopped
    fine grain sea salt
8 oz seasonal vegetables (asparagus, broccoli, cauliflower,
summer squash) cut into 1/2" pieces
    10 large eggs, well beaten
    1/4C goat or feta cheese
    small bunch chives, chopped

Directions

1. Heat 12" heavy ovenproof skillet (cast iron is good) with spray oil. Stir in the onions, potatoes, half the shallots and 2 big pinches of salt. Cover and cook, stirring occasionally until the potatoes are just cooked through - about 5 minutes.

2. Stir in the vegetables and cook until they begin to soften. Remove half of the veggies to a plate.

3. Whisk 1/2t salt into the eggs then pour into the skillet. Cook about 5 minutes over med/low heat or until the eggs are just set, but not browning. Lift the edges of the cooked egg and allow more eggs to run around - like an omlette.

4. Sprinkle the remaining veggies over the eggs, and sprinkle with cheese and shallots.

5. Place under a low broiler for a couple of minutes, or until the eggs are puffed, set and browned. DO NOT WALK AWAY! It will burn in an instant.

6. Sprinkle with chives and serve from the pan!
