Ingredients

    2 lbs boneless skinless chicken breast cut into 1-inch cube
    1can tomato soup
    1 jalepeno pepper seeded and chopped
    1 medium onion chopped
    4 cloves garlic minced
    2 TBSP extra virgin olive oil
    4 TBSP chili powder
    2 chipotle peppers in adobo finely chopped
    2 cups chicken stock
    1 15 oz can kidney beans drained

Directions

Brown chicken and set aside.
In skillet cook onion and garlic for 8 minutes. Add chili powder, chipotles, and chicken. Stir in tomato soup and cook 3 to 5 minutes. Stir in stock and add beans. Simmer for 10 minutes.
