Introduction

Ingredients

    King Arthur 100% Unbleached White Whole Wheat Flour, 3/4 cup
    Quaker yellow corn meal, .75 cup
    Baking Powder, 2 tsp
    Salt, 2 dash
    Skim Milk, 1 cup
    Egg, fresh, 1 large
    Pompeian OliveExtra Plus Omega-3 DHA (Canola oil and extra virgin olive oil), 3 tbsp

    I used used 3/8 cup resistant starch for 3/8 cup of flour in original recipe

Directions

Heat oven to 400 degrees. Grease 8-9 in pan. Combine dry ingredients. Beat egg and combine with milk and oil. Stir wet ingredients into dry until just moistened. Pour batter into pan. Bake 20-25 minutes until light golden brown and tester inserted in center comes out clean.

Serving Size: Makes 9 servings
