Introduction

Number of Servings: 10

Ingredients

    4 Eggs
    1.5 C Bisquick
    1.5 C Milk
    4 Slices Bacon (cooked)
    1/2 C Salsa
    1 C Bell Pepper Diced
    1 C Onion Diced
    2 Med. Potatoes Scrubbed & Diced
    1 T Olive Oil
    4 Oz. Cheddar Cheese Grated

Directions

Dice potatoes, season with Penzy's Northwoods Fire. Cook in non stick skillet in the T Olive Oil. Scramble eggs in a large bowl and add Milk & Stir in Bisquick. Season as desired - (I use fresh ground pepper,Penzy's Mural of Flavor & Northwoods Fire) Cook Bacon.
When potatoes are tender place in bottom of baking dish, add bacon, salsa, peppers & onions. Pour egg mixture over top and bake for about 25 - 30 minutes @350. While baking grate cheddar cheese and add to top of casserole the last 5 minutes of baking. Enjoy!
