Crustless Broccoli Cheese Quiche

Ingredients

    4 large eggs, beaten
    1 cup Milk, 1%
    1 cup Cheddar Cheese, shredded, divided
    1/2 cup Mozzarella Cheese, part skim milk, shredded
    1 Tbsp all purpose flour
    1/2 cup Mushrooms, fresh, cut into pieces or slices
    1/2 cup Onions, chopped
    1 cup fresh Broccoli, chopped
    1/2 tbsp Butter, unsalted
    1 tbsp Bread crumbs, dry, grated, plain
    1/2 cup Cottage Cheese, 1% Milkfat
    1 tsp Thyme
    Salt and pepper to taste

Directions

Preheat oven to 375 F.
Lightly steam the broccoli. Set aside.
Using a pie pan, spray lightly with Pam non-stick spray. Sprinkle the bread crumbs along the bottom of the dish. Using 1/4 of the cheddar cheese, lightly layer on top of the bread crumbs. Layer the prepared broccoli atop the cheese.
In a separate bowl, combine the eggs, milk and cottage, blending well. Add thyme, salt and pepper to taste. Set aside.
In a pan, melt the butter. Add the onion and mushrooms to the pan and cook until vegetables are tender. In a bowl, combine the remaining cheddar and mozzarella cheese with the flour. Toss in the mushroom/onion mixture to coat with flour, as well. Combine cheese/mushroom mixture with the egg mixture and pour over pan with cheese and broccoli. Bake in 375 F oven for 35 - 40 minutes. Allow to set up for 5 minutes before serving.
Can be served hot or at room temperature.
