Introduction

Ingredients

    1 cup white flour
    2 cups whole wheat flour
    2 tbls good olive oil
    1 " molassas
    1.5 " honey
    1.5 tsp salt
    .33 tsp baking powder
    9.5 oz water
    2 tsp yeast

Directions

pre heat oven 365 F....bloom the yeast with the sugars,olive oil,and water in a bowl big enough to knead dough....measure out the flours,salt,and baking powder....make the bloom water about 95 degrees F.for a better rise,not more than that, or you will kill the yeast...mix all,and knead for 5 minutes...if sticky put some oil and water on your hands and knead some more....should be not sticky,also not gritty feeling.....wet a towel,cover and rise till doubled,about 1 hr 10 minutes...punch down ,shape into loaf,put in baking loaf pan that was sprayed with a veg. oil......cover,and rise 3/4" above loaf pan,45 to 50 minutes...
place on center rack of the pre-heated oven for approx. 45 minutes...brush with egg wash last 10 minutes,only once.....if you want you can make it rustic with some sprinkled oat meal on the wet egg wash, finish the bake...remove from the oven,and remove from the pan,cool on wire rack till cool enough to slice with an electric knife......bag and enjoy for sandwiches,toast, whatever you like...it's great,and it doesn't get any fresher than this...
