Cream Cheese Carrot Muffins

Ingredients

    1/2 c. cream cheese, softened
    3/4 cup sugar
    2 eggs
    1/2 cup skim milk
    1/4 cup butter or margarine, melted
    1 tablespoon lemon juice
    1 teaspoon vanilla extract
    1 1/2 cups whole wheat flour
    1 1/2 teaspoons baking powder
    1/2 teaspoon baking soda
    1/2 teaspoon salt
    1 1/4 c. grated carrots
    1/2 c. crispy rice cereal
    1/2 c. oats

Directions

In a mixing bowl, combine the cream cheese, sugar, eggs, milk, butter, lemon juice and vanilla; beat until smooth. Combine the flour, baking powder, baking soda and salt; stir into cream cheese mixture just until moistened. Fold in carrots. oats and crispy rice. Fill greased or paper-lined muffin cups two-thirds full. Bake at 375 degrees F for 20-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.
