Lazy Unstuffed Peppers

Introduction

Number of Servings: 6

Ingredients

    8 oz extra lean ground turkey
    8 oz lean ground turkey
    2.5 cups tomato sauce or crushed (about 1.5 cans)
    1.5 cups prepared brown rice
    1 tsp garlic powder or minced garlic
    1/2 tsp ground black pepper
    1 tsp olive oil
    2 bell peppers, sliced, any variety
    1 onion-1/4 minced, 3/4 sliced
    top with mozzerella (optional, not included in nutrition facts)

Directions

In one pan brown mixed turkey and minced onion. In another pan saute peppers and sliced onions in olive oil. Drain meat and press with paper towels. Add in tomato sauce, rice and seasoning.
Serve with sliced peppers and onions and top with cheese if desired.
You can also do this recipe with beef or make it vegetarian with white beans.
6 - 1 cup servings of filling and 1/2 cup of peppers

When I'm being thrifty I use 3 cups rice, 1 pound meat, 28 oz can of sauce. Adjust seasoning accordingly
