Tortilla Soup

Introduction

This is an amazing soup (especially with lemon juice added at end) that is incredibly versatile. You can add your favorite ingredients! Would be good with some cooked chicken pieces too. This is an amazing soup (especially with lemon juice added at end) that is incredibly versatile. You can add your favorite ingredients! Would be good with some cooked chicken pieces too.
Number of Servings: 1

Ingredients

    1 oz tortilla chips
    1/4 c shredded kraft mexican 2% cheese
    2 Tbsp chopped onion
    1 c V8 juice
    1 c chicken broth
    1/4 oz green chilies
    1/2 t cumin
    1/4 t garlic

Directions

Blend juices, chilies, and spices in blender. Heat in pot over med high heat until hot. Put tortilla chips, onion and cheese in individual bowls. Pour juice over top and serve immediately.

Chunks of avocado, corn, canned chopped tomatoes and/or shredded chicken breasts can be added to the recipe. Just make sure to add the calories into the count!
