Introduction

An excellent sandwich substitute which can be made up in advance. Vary the fillings by adding tuna or cooked meat. An excellent sandwich substitute which can be made up in advance. Vary the fillings by adding tuna or cooked meat.

Ingredients

    1 x 285g tin sweetcorn
    225g Quark (fat free soft cheese)
    1 garlic clove, crushed
    2 tbsp chopped fresh chives
    juice of 1 lime
    black pepper
    4 flat round tortilla breads
    1 red and 1 yellow pepper, seeded and finely sliced

Directions

In a bowl combine the sweetcorn, quark, garlic, lime juice and chives, season with black pepper and mix well.
Place the tortilla breads on a chopping board and spread with the mixture. Cover with the sliced peppers. Roll up tightly and slice in half diagonally. Wrap in food wrap and chill until ready to serve.
