Southwestern Black Bean TVP Burgers

Introduction

This is the Moosewood version with TVP for added protein. Definitely NOT a low calorie food but really satisfying. This is the Moosewood version with TVP for added protein. Definitely NOT a low calorie food but really satisfying.
Number of Servings: 38

Ingredients

    Olive Oil, 6 1tsp (remove)
    Onions, raw, 3 cup, chopped (remove)
    *Cumin (ground), 6 tsp (remove)
    *Coriander, ground, 3 tsp
    Salt, .75 tsp
    Carrots, raw, 3 cup, grated
    Mushrooms, cooked, 3 cup finely Chopped
    Hot chile pepers, 1 pepper
    Orange Juice, .75 cup
    Tortilla chips, low fat (baked), 600 grams
    Bob's Red Mill TVP, 1.75 cup
    Beans, black, 2550 grams
    Egg, fresh, 4 large

Directions

Warm oil in skillet add onions on medium-high heat and sautee for 5 minutes stirring often. Stir in the spices and cook unil the onions are sofr a coulple of minutes. Add the mushrooms, carrots, chiles and orange juice. Lower the heat to meduim and cook until tender stirring occassionally for about 8 minutes.
While this cooks, bake the corn tortillas on a sheet, cool them and grind them. Once cooled, add the ground tortilla chips, beans and egg in a large bown and mash well ( I use a food processor). When the vegetables are tender, pour in the TVP int the sauteeing mixture. Take off the heat and let stand for a few minutes.
Combine both sets of ingredients and form into 1/2 cup patties. Bake on a lightly oiled baking sheet for 25 minutes at 375 degrees. These should be firm and lightly crusted. and Yummy!

Serving Size: Makes 18 - 1/2 cup burgers
