Mediterranean Salad

Number of Servings: 4

Ingredients

    4 stripes chicken bacon
    1 slice whole wheat bread
    1 cup grape tomatoes
    1/4 cucumber cut into pieces
    1 small head of radicchio, sliced thin
    4 oz baby arugula
    1/2 cup pitted kalamata olives
    8 oz bocconcini
    1/4 c reduced fat vinaigrette dressing.

Directions

fry bacon, cut into pieces
place bread in frying pan to brown both sides remove from pan and cut into cubes.
In a large bowl combine, bacon, tomatoes, cucumber, radicchio, arugula, olives and bocconcini, toss and add dressing.
