Introduction

Colorful, crispy and delicious with snap peas, red peppers and carrots. Delicious with Easter Ham. The dressing is a favorite in my house for any asian inspired dish. Ingredients

    • 2 tsp dark sesame oil
    • 1 Tbsp minced peeled fresh ginger
    • ¼ tsp crushed red pepper
    • 1Tbsp oyster sauce
    • 1 Tbsp low sodium (light) tamari soy sauce
    • 1 Tbsp sugar

    • 1 lb sugar snap peas
    • ½ cup julienned carrots
    • ½ cup drained sliced water chestnuts
    • ½ cup sliced mushrooms
    • ½ cup julienned red pepper
    • 2 tsp toasted sesame seeds

Directions

1. Heat sesame oil in a small sauce pan over medium low heat. Add ginger, sauté 2 minutes. Add garlic, red pepper flakes, cook 1 more minute. Stir in oyster sauce, tamari, sugar, salt. Remove from heat; cool.

2. Cook peas in boiling water for ½ minute. Drain and rinse with cold water. Combine peas, carrots, chestnuts, mushrooms, red peppers in a large bowl. Drizzle dressing over salad; toss well. Sprinkle with sesame seeds.

Serving Size: makes 5 - 1 cup servings
