Introduction

A hearty salad that is also very tasty. Whenever possible, I use low-sodium products. I used regular mayo. Although canned chunk chicken is available, I chose to use individually frozen breasts and cut them my self. The salad's taste is well worth the time spent chopping.

Number of Servings: 6

Ingredients

    6 strips turkey bacon, cooked and crumbled
    3 stalks of celery, finely sliced (153 g)
    1 cup grapes, sliced (165 g)
    2 chicken individually frozen chicken breasts, cooked and chunked
    2 T lemon juice (1 fl oz)
    1/2 tsp ground ginger
    1 ssp dried parsley
    1/2 c green onion, finely sliced (38 g)
    3/4 c mayonnaise
    6 cups torn red leaf lettuce

Directions

In a large bowl, combine all salad ingredients and toss well.

Serving Size: about 2 cups
