Introduction

Ground Beef Enchiladas using homemade red enchilada sauce. The red enchilada sauce is from allrecipes.com. I use this sauce because I have to watch the sodium. Ingredients

    1 lb. ground beef, 1 cup chopped onion, 2 cups Mexican shedded cheese, 12 corn tortillas, and the red enchilada sauce from allrecipes.com

Directions

Brown the ground beef and the onion in pan. Than warm the tortillas up the microwave. Than pour some sauce in shallow pan dip the tortilla one at time fill the tortilla with ground beef mixture. Roll them up put the seam side down. Than pour the enchilada sauce over the enchiladas. Put 2 cups of thecheese on top. Bake in 350 degrees for 35 minutes

Serving Size: one stuffed tortilla makes 12 servings
