Beef Fajitas


Number of Servings: 4


    1/2 c. chopped cilantro
    1/4 c. fresh lime juice
    3 cloves garlic, minced
    1 t. dried oregano
    1/4 t. freshly ground black pepper
    1.3 pounds Round Steak
    1 medium green bell pepper, cut into thin strips
    1 medium red bell pepper, cut into thin strips
    1 medium onion, sliced
    1 t. olive oil
    1.5 c. shredded Romaine lettuce
    Four 6-inch flour tortillas


In a small bowl, combine the cilantro, lime juice, garlic, oregano and black pepper. Place the meat in a shallow dish and pour the marinade for 30 minutes, turning it at least once. Preheat the broiler. Reserving the marinade, remove the beef and place it on a broiler pan. Add the green and red bell peppers, onion, and olive oil to the marinade and toss to coat well. Place the peppers and onion on the broiler pan with the meat. Broil the meat and vegetables 4 inches from the heat for 6 minutes. Turn the meat and vegetables over and broil until the beef is medium rare and the peppers and onions are beginning to brown, about 5 minutes. Let the beef rest for 5 minutes before carving, then cut across the grain into scant 1/4 inch slices. Dividing evenly, place beef slices, pepper and onion mixture and shredded lettuce on each of the tortillas. Fold up and serve.
