Basic Chocolate Cake (with glaze)

Ingredients

    1-3/4 cups all-purpose flour
    3/4 (or 1/2) cup unsweetened cocoa powder
    1 tsp baking powder
    2 tsp baking soda
    1 tsp salt
    2 cups sugar
    2 eggs
    1 cup skim milk
    (less 1 T; add 1 T distilled white vinegar and let sit 5min.)
    1/2 cup unsweetened applesaue
    2 tsp vanilla extract
    1 cup boiling water

    Glaze: 2 cups powdered sugar + 2-1/3 - 2-1/2 T fat free milk

Directions

1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour pan(s).

2. In a large bowl, whisk together the sugar, flour, cocoa, baking powder, baking soda and salt. Add the eggs, milk, applesauce, vanilla, and the water. Stir just until completely combined. Pour evenly into the prepared pan(s).

3. Bake 30 to 35 minutes (2 - 9inch round pans) or 1 hour (bundt). Cool in the pan(s) for 10 minutes, then remove to the freeer or fridge to cool completely (about 30 minutes in freezer). Once cool, pour glaze over the top of the cake or cake layers. Allow glaze to firm up slightly in the refrigerator.

Note: Let flavors mellow in the fridge overnight for the best results.
