3 C. sliced Zucchini
3 C. sliced Yellow Summer Squash
2 Eggs, beaten (or whisked)
1 small Onion, chopped
1/4 Green Pepper, chopped
1 C. Mayonnaise
1 C. Parmesan Cheese (dried kind such as Kraft's)
1/2 tsp. Salt
1 tsp. Black Pepper
1/2 to 1 C. Dry Bread Crumbs
Spray a 9 x 12 inch dish. Pour casserole mixture into it.
Sprinkle with bread crumbs.
Place in preheated 350 F. oven and cook for 45 minutes.
Serving Size: 9 x 12 inch pan. Makes 12 servings.
