Creamy potato-onion soup

Introduction

This is a nice potato-onion soup that doesn't use butter or heavy cream. This is a nice potato-onion soup that doesn't use butter or heavy cream.
Number of Servings: 8

Ingredients

    Potato, raw, 3 large (3" to 4-1/4" dia.), mashed
    Buttermilk, lowfat, 2 cups
    Chicken stock, home-prepared, 2.5 cups
    Sour Cream, reduced fat, 0.5 cup
    Salt, 1 tsp
    Pepper, black, 1 tbsp
    Garlic, 3 tsp
    Onions, raw, 0.5 cup, chopped
    Extra Light Olive Oil, 1 tbsp

Directions

Cube and boil potatoes, drain and roughly mash.

In a separate pan, cook the diced onion in the olive oil, just until it starts to turn brown.

Add the chicken stock to the onions, and bring heat up slowly. Add in the roughly mashed potatoes, buttermilk, and sour cream. Bring almost to a boil, then turn heat down. If you let it reach boiling, the sour cream will separate and look like teeny chunks.

Turn down to low heat and let it simmer while stirring frequently, about 25 min. The objective is to let the flavors mix and develop, not to reduce the liquid volume.
