Ingredients

2 TBS extra virgin olive oil
1 bunch green onions, diced
6 cloves garlic, minced
3 boneless, skinless chicken breast, skin removed, cut in half (approx. 3 oz. each half)
1 bunch fresh oyster mushrooms (132 grams)
1/2 cup white wine
1 cup ckicken stock
Handful fresh spinach
1 bag frozen artichoke quarters (12 oz)
Directions
makes 6 servings (1/2 chicken breast each + veggies)
1. Saute onions and garlic in olive oil until translucent
2. Add chicken, cook on medium until chicken is white on all sides
3. Add chicken stock, white wine, artichokes and mushrooms
4. Cover & simmer on low for 30-45 minutes
5. Add spinach, cook until spinach starts to wilt.
6. Serve as is, or over rice or pasta (not included in nutritional values)
