Tortellini, Spinach, and Tomato Soup

Tortellini, Spinach, and Tomato Soup

Introduction

Number of Servings: 4

Ingredients

    2 Tbsp unsalted butter
    6 cloves garlic
    4 cups low salt, low fat chicken broth
    6 ounces fresh or frozen cheese tortellini
    14 ounces canned diced tomatoes, with their juice)
    10 ounces spincah, washed, stemmed, coarsely chopped
    8 basil leaves, coarsely chopped
    Parmesan, grated

Directions

Melt the butter in a large saucepan over medium-high heat. Add the garlic and sauté until fragrant, about 2 min. Add the broth and bring to a boil. Add the tortellini and cook halfway, about 5 min. for frozen pasta, less if using fresh. Add the tomatoes and their liquid, reduce the heat to a simmer, and cook just until the pasta is tender. Stir in the spinach and basil and cook until wilted, 1 to 2 min. Serve sprinkled with the grated cheese.

  • Great tasting dish! I used four cans of chicken broth because four cups didn't give it that soupy texture. I also added half a chopped onion, some oregano, parsley and pepper! Be careful not to overcook your tortellini like I did - I didn't mind it, but thought I would share the tip! - 10/30/07
