Thyme Stuffed Mushrooms

Introduction

Number of Servings: 4

Ingredients

    8 oz medium white mushrooms
    2 tsp olive oil, divided
    1 tbls minced shallot
    1 clove garlic, minced
    1 1/2 tbsp plain bread crumbs
    1 tsp chopped fresh cilantro
    1/8 tsp dried thyme
    1.8 tsp ground black pepper

Directions

preheat oven to 375

Rinse the mushrooms until clean. Set aside 8- 12 mushrooms removing the stems. Chop the stems and left over mushrooms. Pour 1 tsp of olive oil into a 8 inch square baking pan. Toss the 8-12 mushroom caps in the oil, and arrange well side up.

In a small nonstick skillet, heat the remaining 1 ssp olive oil oer medium to high heat. Add the shallot, garlic, and chopped mushrooms. Cook, stirring until softened. About 2 min Stir in bread crumbs parsley, thyme, and pepper for an additional 1-2 min. Remove from heat.

Fill the wells of the mushrooms with the bread-crumb mix. Bake 12 minutes or unt9ll mushrooms are cooked through.

Remove from oven, and serve
Optional to sprinkle the top with grated Parmesan cheese for extra taste.
