Black Bean Salsa

Introduction

This is a great chunky veggie salsa. It's always a huge hit at parties, and I know I just can't stop eating it when I have it at home! This is a great chunky veggie salsa. It's always a huge hit at parties, and I know I just can't stop eating it when I have it at home!

Ingredients

    5 green peppers, 2 red peppers, 1 lg onion, 14 roma tomatoes, 1.5 c frozen corn, 2 15 oz cans black beans, 1/4 c lime juice, 2 T olive oil, 2 T red wine vinegar, 4 T chipotle peppers in adobo sauce

Directions

Dice peppers, onion, and tomatoes and put in large bowl. Drain and rinse black beans, add to vegetables. Add corn. In separate bowl mix sauce: lime juice, olive oil, and red wine vinegar. Finely chop/squish 4 T chipotle peppers and add to sauce. Stir, then add sauce to vegetable/corn/bean mixture. Mix well and serve!

Change the amount of chipotle peppers to taste. More = hotter, less = less hot. My mom (a 55 year old Minnesota gal who thinks ketchup is spicy) uses about 2 T of chipotle peppers. I use the whole can. My husband (who is CRAZY) adds a few habanero peppers.

Makes 35 1/2 cup servings. Refrigerate for up to a week.
