Slow Cooker Risotto Variation

Introduction

Received this recipe from a blog I subscribe to for crock pot cooking; made a few changes and family enjoyed it. Received this recipe from a blog I subscribe to for crock pot cooking; made a few changes and family enjoyed it.

Ingredients

    1/2 cup sun-dried tomatoes in oil
    1 1/2 cup Arborio rice
    4 cups chicken broth (I used 2 C Broth and 2 C water because that's what I had on hand.)
    1/2 cup shredded cheese (to add later) (Original recipe calls for Swiss but all we had was cheddar/jack so that's what we used. Would be better with Swiss or Parmesan.

Directions

Put tomatoes in crock pot, stir in rice, add chicken broth and water. Cook on HIGH in crock pot for 2-4 hours. Check after 2 hours. Stir in cheese before serving.

Serving Size: Makes 8 1/2-cup servings (give or take)
