Low-Carb Chicken Stir Fry

Introduction

Yummy yet low carb too! Yummy yet low carb too!
Number of Servings: 6

Ingredients

    1 cup Water Chestnuts
    1 Cup Bamboo Sprouts
    1 1/2 Cups Mushrooms
    2 Cups Diced Celery
    1 Cup Grated Carrots
    3 Cups Sliced Onions
    2 Tbs. Olive Oil
    4 Tbs. Soy Sauce
    1 1/2 Cups Diced Chicken (Pre-cooked before adding)

Directions

Cook onions, carrots & celery in the olive oil until nearly tender. Then add bamboo sprouts, mushrooms and water chestnuts. When all are tender and warm, add soy sauce and precooked chicken. Serve over steamed grated cauliflower. (Or rice if preferred)
