French Onion Beef, Carrots, Mushrooms

Ingredients



    3 oz. carrots cut into peices
    4 oz whole mushrooms, quartered
    8 oz. round steak, cubed.
    1/2 of 1oz package of dried onion soup mix
    2 TBSP. water.
    1 TBSP. dried parsley
    1/8 tsp paprika

    1 tomato, diced (optional)

Directions

Bring just enough water to cover bottom of pan to boil over hi heat, add carrots, return to boil; reduce heat, cover & simmer 3 minutes or til tender. Drain well & set aside on plate.
Put pan on medium hi heat & coat with cooking sporay, add mushrooms, coat them with cooking spray & cook 4 minutes, stirring often. Set aside on plate.
Return pan to medium hi heat & add beef & soup mix, cook til brown. Remove from heat & add carrots & 1/4 c water; cover & let stand 5 minutes.
Stir in mushrooms, sprinkle with parsley and paprika.

Serve beef mixture over mashed potatoes (optional- sprinkled with diced tomatoes.)
