Banana muffins with Tart Lemon Icing

Ingredients

    Place sugar and 5 Tbsp. of softened butter in a large bowl, cream with electric mixer until light and fluffy. Add egg and 1 tsp. of vanilla, beat until mixed thoroughly.
    In another bowl, mix together flour, baking powder, and baking soda. Add half of the flour mixture to butter mixture, beat well. Add milk and remaining flour mixture, beat until batter is combined and then fold in mashed bananas.
    Spoon batter into muffin liners about 3/4 full. Bake until muffins start to brown and a tester inserted into the center comes out clean, about 25-30 min. Allow muffins to cool in pan for 2 min, remove to wire rack and cool completely before icing.
    Meanwhile, to make icing, combine powdered sugar, reamaining Tbsp. of butter, 1 Tbsp. of fresh lemon juice, 1 tsp. of lemon zest, and remining vanilla in a medium bowl, beat with mixer about 1-2 min. Ice cooled muffins, cover and refridgerate any uneaten muffins.

preheat oven to 350 degrees. Line 18 muffin holes with paper liners.
