Thai Cabbage Salad: March 2011

Introduction

A spicy and refreshing side dish. Adjust the crushed red pepper to your own liking (or better yet let people add it on their own) A spicy and refreshing side dish. Adjust the crushed red pepper to your own liking (or better yet let people add it on their own)
Number of Servings: 9

Ingredients

    8 cups cabbage, grated
    2 red sweet bell pepper, slivered
    1/3 C apple cider (or rice) vinegar
    3 T Thai Sweet Chili Sauce
    2 tsp black (Thai) soy sauce (lower salt)
    1 tsp crushed red pepper flakes

Directions

1) Grate or chop vegetables in bowl
2) Mix spices and sauces. Then toss with chopped vegetables.
3) Refrigerate an hour or so before serving. Toss well before serving.

Serves about nine 4-oz (1 cup) servings. Each serving is two vegetable servings.

Optional (not currently in nutritional listing): If you like, garnish with cilantro or chopped peanuts. Sometimes I add a half cup of grated carrot or switch out one of the red peppers for an orange or yellow pepper (love the colors!).
