In skillet over med-high flame, add 1 Tbsp extra light olive oil, 1 Tbsp fish sauce, 1 Tbsp minced garlic, 1 tsp minced ginger, 1/2 cup thinly sliced red onion, and 3 oz thinly sliced sweet peppers; saute and gently stir until onion opaque and peppers cooked through (but not mushy). Add 4 oz lean turkey and 1/2 Tbsp red curry paste. Cook until turkey is done. Add 4-1/2 cups fresh spinach and cover; reduce heat (just want the spinach to wilt).
