2 cups cooked whole wheat spaghetti, rinsed and cold
1/2 red onion, finely diced
1/2 seedless cucumber, finely diced
3 Roma tomatoes, finely chopped
1/3 cup red pepper, finely diced
1/3 cup yellow pepper, finely diced
1/3 cup orange pepper, finely diced
2 cloves garlic, minced or grated
1/4 cup olive oil
4 teaspoons balsamic vinegar
Salad is best served at room temperature. This allows the olive oil to blend with the balsamic. you may also want to add a pinch of salt to each serving.
