Chicken Jambalaya

Introduction

This is a healthy twist on this classic recipe. I absolutely love it! It's one of my favorites. It takes a little prep time because of all of the fresh ingrediants, but it is well worth it. Number of Servings: 4

Ingredients

    cooking spray
    2 tsp olive oil
    3/4 cup cooked ham (ham steak chopped or cubed)
    3/4 cup of chopped green pepper
    1/2 cup of chopped onion
    1/2 cup chopped celery
    2 cloves of minced garlic
    2 cups of chicken broth
    1 can of stewed tomatoes
    2 cups of COOKED chicken
    2/3 cup of long grain rice, uncooked
    1 tsp basil
    1/2 tsp thyme
    1/2 tsp chili powder
    1/2 tsp hot sauce (I use tabasco habinero)
    1/2 tsp salt
    1/4 pepper

Directions

Cook chicken and set aside. Heat a large pan (or Dutch oven) over medium heat. Add oil and saute ham, green pepper, onion, celery, and garlic. Saute around 5 minutes. Stir in chicken broth and remaining ingrediants. Bring to a boil; cover, reduce heat and simmer 15 minutes. Uncover and cook another 15 minutes or until liquid is absorbed and rice is tender. Stir occasionally.

Serving Size: makes about 4 1 1/2 cup servings
