Introduction

This is a great modified version to be P2 friendly of sunomono salad. This is a great modified version to be P2 friendly of sunomono salad.
Number of Servings: 3

Ingredients

    300 g. cucumbers, sliced
    1 t. salt
    1/3 c. rice vinegar (no sugar)
    1/8 t. stevia
    2 t. Bragg's Liquid Aminos
    1/4 t. grated fresh ginger root

Directions

Cut cucumbers into thin slices, place in bowl and sprinkle with salt. Let stand at room temperature 30 minutes or until cucumbers are softened. Drain and rinse thoroughly with water to get all the extra salt out.

Combine vinegar, sugar, braggs, and gigner in serving bowl. Add cucumbers and combine well. Chill thoroughly before serving.

Serving Size: Makes 3 servings
