Introduction

Quick, easy, warming chicken soup using store bought broth. Quick, easy, warming chicken soup using store bought broth.

Ingredients

    7 oz. chicken cutlets
    6 cloves garlic
    6 leaves collards
    6 leaves kale
    1 small red potato
    1 small onion
    32 oz. Trader Joe's low sodium broth
    8 asparagus stalks
    1/2 cup arugula
    8 croutons

Directions

sauteed garlic, onion, in pan for 5 minutes, add sliced thin chicken cutlets, and potato cubes, cook another 10 minutes, add low sodium chicken broth with all the vegetables, cover and simmer for 10 more minutes. I added tsp turmeric and ground New Orleans file powder for gumbo.
