11-biryani rice

Introduction

Very flavorful Saudi Arabian rice dish I use as a main meal. May be eaten with yogurt or cucumber-yogurt salad. Lamb may be used instead of beef. Very flavorful Saudi Arabian rice dish I use as a main meal. May be eaten with yogurt or cucumber-yogurt salad. Lamb may be used instead of beef.
Number of Servings: 8

Ingredients

    1 pound stew meat
    3/4 cup chopped onion
    2 TBSP butter
    1/4 tsp saffron, soaked in 1/4 cup water
    1 tsp cumin
    1 tsp ginger
    1 tsp cinnamon
    1 tsp dried criander
    salt
    2 Bay leaves
    1/4 tsp cloves
    1/2 tsp nutmeg
    1/2 cup chopped cilantro
    2 cups basmati rice
    1/2 onion, sliced thinly into rings
    oil for frying onion
    2 oz roasted cashews
    1/2 cup raisins

Directions

8 1 1/2 cup servings

heat butter and fry onion until golden. Stir in meat, dried and fresh cilantro, bay leaves, spices (except saffron). Stir until meat is golden. Add salt, saffron, chicken broth and cook 30 minutes. Remove bay leaves. Add rice to the same pot.. Cover, and cook until rice is done, about 20 minutes more.
Fry the sliced onions in oil until brown.
Stir rice and place on a platter. Garnish with fried onion rings, cashews and raisins.
