Ingredients

12 oz ground beef
1 tsp dried parsley
1 tsp salt
1/2 tsp pepper
1/3 cup nonfat milk
1 can diced tomatoes, drained
4 cups mashed potatoes, prepared
1 slightly beaten egg
2 tsp dried minced onion
1 cup shredded cheese
Directions
brown ground beef in a skillet, season with parsley, salt and pepper. Add drained can of tomatoes and 1/3 cup milk, simmer 10 minutes.
In separate bowl, combine mashed potatoes, one egg and the onions.
In a casserole dish, Layer 1/2 of potatoes, meat mixture, and the rest of the potatoes, sprinkle cheese on top. Bake at 400 for 25 minutes. 8 approximately 1 cup servings.
