Baked Green Peppers stuffed rice & meat substitute

Introduction

Mixture of rice, vegetable & soy stuffed green peppers. Baked, topped w/ organic yogurt. Mixture of rice, vegetable & soy stuffed green peppers. Baked, topped w/ organic yogurt.

Ingredients

    3 medium Green Peppers, rinsed and hollow
    1 cup Kraft Minute brown rice
    defrost & crumble two veggie burgers
    tomato Paste
    Vegetable Flakes (Spice Supreme label)
    1/2 cup Non fat plain yogurt

Directions

Rinse and hollow peppers, saving tops for caps. Ping green peppers on sides with a fork to allow steam cooking
throughout.
Parboil brown rice mixed w/spice supreme vegetable flakes, no salt added tomato paste.
Warm veggie burgers to break into crumbs. Mix rice, seasoning, ground beef mix evenly.
Spoon stuffing mix into peppers, cap. Put water in bottom of baking dish, 1 1/2 inch high.
Cover with Alumium foil.
Bake 45 minutes, until peppers are tender and change color. (olive green)
Remove from oven and cool.
Serve halved with yogurt on top.
