IntroductionYummy chewy oatmeal cookies! I originally made these for ice cream sandwiches for a youth centre I run, but I fell in love with these chewy things. Yummy chewy oatmeal cookies! I originally made these for ice cream sandwiches for a youth centre I run, but I fell in love with these chewy things.
1 cup Whole Wheat Flour
1 Cup Unbleached Flour
1 cup I can't believe it's not butter LIGHT spread (melted)
1 3/4 cup Splenda Brown Sugar Blend
3 cups Quaker Large Flake Oats
1 tsp baking powder
1 tsp vanilla extract
Cinnamon to taste
Mix all dry ingredients in one bowl and wet ingredients in another.
Combine the two bowls and mix well. I used my hands.
If the mixture, well not if, it will be sticky, I dampened my hands with water and this worked well. Scoop out 1/8th of a cup of dough and round into a ball. Flatten on a cookie sheet with parchment paper.
Bake at 350 for about 10 minutes.
Cool and add ice cream in the middle like I did if you want :)
