Tortilla Soup (allsweetali)

Ingredients

    2 Tbsp. olive oil
    1 medium onion, chopped
    4 garlic cloves, pressed or minced
    2 Tbsp. salsa
    1- 14.5oz can beef broth
    1 can tomato soup
    3 cups chicken broth
    1- 30 oz. can Rotel tomatoes with peppers
    1 tsp. ground cumin
    2 tsp. Worcestershire sauce
    2 Tbsp. lime juice
    .5 cup freshly chopped cilantro
    3 chicken breasts, cooked and shredded
    sour cream (opt. - not tracked)
    Monterrey jack cheese (opt. - not tracked)
    avocado (opt. - not tracked)
    tortilla chips (opt. - not tracked)

Directions

1. In a large soup or stock pot, saute oil, onion, garlic, and salsa. Cook over med heat until onions are semi-soft.
2. Slowly add ingredients from beef broth to chicken.
3. Simmer all ingredients for about 15 minutes.
4. Serve with a spoonful of sour cream, some grated Monterrey jack cheese, a few slices of avocado, and some crushed tortilla chips on top.
