Pasta with golden tomatoes (by Mario battali)

Introduction

I cut a little fat by using 2 tbs oli instead of 4 and .5 cup parmezan instead of 1 cup. I cut a little fat by using 2 tbs oli instead of 4 and .5 cup parmezan instead of 1 cup.

Ingredients

    6 oz pasta,
    2 tbsp olive oil
    8 oz or 230 grams small hieloom tomatoes ,yellow tomato
    or cherry tomato (wich ever you can find)
    2 garlic cloves thinly sliced
    1/2 tsp crushed red pepper flakes
    1/2 cup grated parmezan
    6 medium size fresh basil leaves torn apart

Directions

Heat half the oil in skillet, med heat,add tomatoes,garlicand red pepper flakes season with salt ,optional.
Cook covered,swirl pan often,until tomatoes blister and bursts.10 - 12 min.Press down on tomatoes to release juices.Remove pan from heat and set aside.
Meanwhile bring 3 Qts water to a boil in a large pot,Season water with salt add pasta and cook,stirring occasionally
until about 2 min remain for "al dente" fermness.
Drain pasta but reserve 1 cup of the liquid,
Transfer pasta to skillet with the tomatoes,set over high heat
add 1/2 cup of pasta water cook stirring and tossing often,until sauce is thickened and coats the pasta
about 1 minute,stir in remaining 1 Tbsp oil and the grated parmezan,half the torn basil ,toss untill sauce coats the pasta and pastais al dente (add more of the pasta water if needed)
Serve alone or with chicken or fish.
