Kidney Bean Patties

Introduction

Great tasting kidney bean patties Great tasting kidney bean patties
Number of Servings: 10

Ingredients

    2 cups light red kidney beans, drained rinsed and mashed
    2 cups italian bread crumbs
    5 scallions, chopped
    5 tbsps canola oil
    1 garlic clove, minced
    salt and pepper
    1/4 cup margarine (optional, not included in nutritional calculations)

Directions

Sautee scallions in vegetable oil. Set aside 1/4 cup bread crumbs. Mix everything else throughly in food processor. Add salt and pepper as needed. Form into ten patties and bread with remaining crumbs. Pan fry three minutes on medium heat until warm.

For a varient of this add a small pat of butter in the middle of each patty when forming them.

Serving Size: makes 10 patties
