Parmesan Zucchini

Number of Servings: 2

Ingredients

    1 medium zucchini (can use summer squash)
    1/2 tsp olive oil
    Dash of kosher salt
    Dash of garlic powder
    Dash of ground pepper
    1 tbsp parmesan cheese, grated (add more or less to taste)

Directions

Preheat broiler

Rinse zucchini, cut in half lengthwise. Use either a metal pie dish or a jelly roll pan. Put zucchini cut side up in pan, drizzle with olive oil, add seasonings. Broil on top rack till done, 5 - 10 minutes. Top with parmesan.
