Granola Bar

Ingredients

    2 cups oats
    3/4 cup wheat germ
    1/2 cup ground flax seed
    3/4 cup sunflower seeds
    1 cup almonds (slivered, chopped - however you would like them)
    1/3 cup brown sugar
    3/4 cup honey
    3 tablespoons peanut butter (I use smooth, but it can be chunky if you would like, also I usually just use 2 heaping spoonfuls of peanut butter, which would probably equal out about 3 tablespoons)
    4 Tbsp butter
    2 tsp vanilla extract
    1/2 tsp salt
    8 oz of dried fruit
    1 bag of Ghirardelli Chocolate Chips (60% - or your choice)

Directions

Preheat oven to 400 degrees. Mix dry ingredients (oats, wheat germ, flax seed, sunflower seeds, and type of nuts (almonds in this case). Place all into a 9 x 13 pan and put into oven for 10-12 minutes and mixing it every 2 minutes so that the ingredients don't burn.

At the same time set the stove to a 3 - 4 range for your "glue". Mix the brown sugar, honey, butter, vanilla extract, peanut butter, and salt into a pot and put on the stove for about 10-12 minutes as well. Make sure to stir contstantly so this doesn't burn as well.

When both glue and dry ingredients are done, mix both in a big sturdy bowl (one that won't melt since the glue will be coming straight off the stove), along with the fruit.

Once all ingredients are mixed together (except the chocolate chips) grab a 9 x 13 baking pan (or a cookie sheet pan) and line with wax paper. Fill the pan with the mixture and with another wax paper, place on top of the mixture and start pressing down on the mixture to get it nice and packed (I usually use a cookie sheet and then place the wax paper on top and use a rolling pin to flatten the granola out).

Let it set for 2 hours or a little more. Take the chocolate chips and melt in the microwave for 1 minute. Stir. If not completely melted, keep microwaving and stirring in increments of 15 seconds until all is completely melted. Pour the chocolate all over the granola bars and smooth out to a smooth finish. Place in the refrigerator to make the chocolate hard. Pull out and let it come to room temperature. Once at room temperature, take the granola mixture and turn over onto another piece of wax paper (or cutting board) and cut them to your size!
