Cranberry, apple, chicken, green bean delight

Number of Servings: 4

Ingredients

    1 cup green beans (fresh)
    1/2 cup mushrooms (fresh)
    1 cooked chicken breast
    1 Tbsp olive oil
    1 cup 99% fat free chicken broth
    1/4 cup apple juice
    1/4 cup cranberry juice
    1/4 cup flour
    1 cup white rice

Directions

Cook white rice to desired consistency.
Sautee green beans, mushrooms and chicken breast in olive oil with desired seasonings (I use fresh ground tuscan seasoning). Add broth, apple and cranberry juice and bring to a near boil. Add cold water to the flour in a separate bowl and mix. Stir into heating mixture to thicken and allow to cool. Serve over rice.

Serving Size: Makes 4 half cup servings
