Whole Wheat Pastry Flour, 2 cup
Baking Powder, 1.5 tsp
Baking Soda, 1.5 tsp
*Xagave, 16 tbsp
Applesauce, unsweetened, .5 cup
Egg substitute, liquid (Egg Beaters), .5 cup
Milk, nonfat, .8 cup
Vanilla Extract, 1 tsp
*Dairy - Dannon Greek Yogurt - Plain 1mini-tub
Lemon juice, .25 cup
1 cup boiling water
In a mixing bowl combine all dry ingredients.
In a large measuring cup, combine xagave, applesauce, eggs, milk, vanilla, yogurt, and lemon juice, then add to dry mix. Add boiling water last, mix for 2 minutes. Pour into pan and bake for 30 - 35 minutes until tester comes out clean.
I did this, and yet I don't think it was quite cooked all the way. It was a little golden, but perhaps could have turned a little more brown. Raised nicely and then sank a little. OH well...live and learn. Let me know if it comes out better for you. ;)
