Introduction

This soup is easy to prepare and can be stored in the fridge for up to a week, or in the freezer. This soup is easy to prepare and can be stored in the fridge for up to a week, or in the freezer.
Number of Servings: 12

Ingredients

    3.5 litres water
    4 carrots, roughly chopped
    1/2 head celery, roughly chopped
    1 medium onion, quatered
    2 cloves garlic, crushed
    2 bay leaves
    4 springs fresh thyme
    4 whole cloves
    6 springs of parsley
    Large handful fresh leaf spinach, coarsley shredded
    Juice of 1 lemon
    1 tsp Dijon mustard
    Freshley ground black pepper, to taste

Directions

Put all the ingredients, except the lemon juice, mustard and black pepper, in a large saucepan, bring to the boil and simmer gently for 30 minutes.

Strain the liquid into a jug and throw the vegetables away. Return the broth to the pan and stir in the remaining ingredients. Stor the soup in the fridge.
