This is one of those recipes that has been around a long time. I have tried to lighten it up a bit and it still tastes good. Serve with a nice salad or colourful veggies and you have yourself a meal. Ingredients

    1.5 pounds lean ground beef
    2 tablespoons margarine
    1 cup onions, sliced
    1 cup fresh mushrooms, sliced
    2 cloves garlic, minced
    2 cups beef consomme
    6 ounces uncooked med. egg noodles
    1.5 cups light sour cream
    salt and pepper to taste
    parsley to garnish

Directions

makes 8 1-cup servings

Lightly brown the onions, mushrooms and garlic in the butter.
Add the ground beef, breaking into small pieces. Cook until no longer pink.
Add the consomme and simmer, uncovered for about 15 minutes.
Add noodles (uncooked), cover and simmer until the noodles are soft (20 to 30 minutes). Check them at 20 minutes.
Stir in sour cream and salt and pepper to taste.
Serve garnished with parsley.
